Bacon, Spinach and Tomato Pasta

For a long time I thought I didn’t like spinach. Turns out I just don’t like a pile of steamed spinach on my plate – but in most forms (like this pasta, soups, etc.) I do really like it. My kids will eat it in this form, too. It’s a very simple, quick pasta dish that is also very yummy, and uses fresh summer flavors. I like to use brown rice pasta in this, which makes it gluten-free.

Steps

  1. Start water boiling and cook pasta according to package directions.

  2. In a medium frying pan over medium-high heat, cook the bacon until crispy. Remove it from the pan and set aside. Crumble when cooled.

  3. Add the olive oil to the pan and scrape a bit to get the yummy bacon bits off the bottom of the pan. Add the garlic and spinach and sauté until soft, about 5 minutes. Add the diced tomatoes and a pinch of sea. Add the crumbled bacon back to the pan.

  4. Just before serving, toss the drained pasta with the bacon mix. Top with freshly grated parmesan or Romano cheese.

  5. Serving Suggestion: Pair with a light salad with Sweet Onion Poppy Seed dressing for a light lunch.
